There is no "right" answer to this question. Some people just choose
one subject's brain. Other people use the average of the brains of all
subjects (which will be quite blurry). You could create this average with
the program "3dmerge -gmean", or with the program "3dMean". At one time
I thought of creating a Talairach-Tournoux brain from the Atlas, but
was dissuaded from doing this by the publisher of the Atlas (Thieme), which
holds the USA copyright and didn't want their images used for this purpose
(since they sell them for other purposes).
