Hi Meng-
1) You can use any participant's standard surface, or you can use a the standard surfaces from MNI or TT, which admittedly often look very pretty since they're based on a clean template:

2) You can use the standard space SurfVol from the links above.
3) I think using the standard brain mesh and SurfVol addresses your other questions, but it's early and I just got coffee so let me know.
