I have seen the Doublesight displays before, but I think they are a packaged dual monitor configuration meaning they give you a dual display stand with a single base for both monitors. We just use the stands that come with the monitors, but other dual (or more) display stands are available (Ergotron, for instance). The Doublesight, I just found, is owned by a Korean LCD and Plasma TV manufacturer, Erea. The connections are the same for either kind of dual display system. I don't know if Doublesight makes an effort to calibrate across monitors or at least offer some sort of consistency which might be an advantage. The other one you mentioned, Max Displays, I've never seen, but they make two, three and four monitor configurations.
Yes, two Eizos would work with your Linux system as long as your computer system has a dual video graphics card and a good driver. Sometimes the driver can be tricky to find and configure.
