I will leave question #2 for others, but for changing
the colorbar, consider the README.driver file that
should be in your AFNI binary directory (note the
output from "which afni").

See the descriptions of SET_PBAR_ALL for specific
control over color displays, including the 5 color
(well, 4 color plus none) example:

SET_PBAR_ALL A.+5 2.0=yellow 1.5=green 1.0=blue 0.5=red 0.2=none

That could be applied via some -com option, as in:

plugout_drive -com 'SET_PBAR_ALL A.+5 2.0=yellow 1.5=green 1.0=blue 0.5=red 0.2=none' -quit
